Hand-pressed tortillas, salsas made every morning and recipes from the Ortega family’s kitchen in Puebla. Sit down, take out, or let us feed the party.

Golondrina means swallow, the bird that flies north every spring and finds its way back. Rosa and Héctor Ortega opened in 2011 with one trompo, six tables and Rosa’s mother’s mole.
Fifteen years on, the trompo still turns from 11 every morning, the tortillas are still pressed by hand, and you’ll still find Héctor behind the counter most nights, with their daughter Lupe now running the catering side.
